06 - 2 tablespoons breadcrumbs, optional for texture

09 - 1/4 teaspoon black pepper
10 - 1/4 teaspoon crushed red pepper flakes, optional

→ Topping

11 - 2 tablespoons grated Parmesan cheese
12 - Olive oil spray

# Step-by-step guide:

01 - Preheat air fryer to 350°F for 3 minutes.
02 - Gently remove stems from mushrooms. Finely chop the stems and set aside.
03 - In a skillet over medium heat, add chopped mushroom stems and spinach. Cook for 2 to 3 minutes until spinach is wilted and excess moisture evaporates. Remove from heat and let cool slightly.
04 - In a mixing bowl, combine softened cream cheese, cooked spinach and mushroom stems, garlic, Parmesan, breadcrumbs, parsley, salt, pepper, and red pepper flakes. Mix until smooth and well combined.
05 - Spoon filling evenly into each mushroom cap, mounding slightly.
06 - Sprinkle tops with additional Parmesan cheese.
07 - Lightly spray air fryer basket with olive oil. Arrange stuffed mushrooms in a single layer. Mist tops with olive oil spray.
08 - Air fry at 350°F for 10 to 12 minutes until mushrooms are tender and tops are golden brown.
09 - Garnish with fresh parsley and serve warm.

# Expert tips:

01 -
  • They cook faster than you can set the table, leaving you calm instead of sweating in the kitchen while guests arrive.
  • The filling stays creamy inside while the mushroom caps get tender and slightly caramelized, hitting that texture contrast that makes people reach for seconds.
  • It's vegetarian without feeling like you're missing anything, and the spinach hiding inside gives you that quiet satisfaction of sneaking in something good.
02 -
  • The spinach must be cooked and cooled before mixing with the cream cheese, otherwise the heat will cause separation and your filling texture becomes grainy instead of smooth.
  • Don't overcrowd the air fryer basket or they steam instead of roast, so if your air fryer is small, plan to cook these in batches and keep the first batch warm in a low oven.
03 -
  • Buy mushrooms that are similar in size so they cook evenly, and select ones with deeper cups rather than flat caps because they hold the filling better.
  • If your cream cheese is cold straight from the fridge, cut it into chunks and let it sit on the counter for ten minutes before mixing so it blends smoothly into the filling without creating lumps.
